- 6 packets unflavored gelatin powder, approximately 42 grams
- 3 cups filtered water
- 3–4 tablespoons stevia or monk fruit sweetener
- 4 tablespoons fresh lemon juice
- 1 teaspoon ginger powder
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cardamom powder
- 2 cups fresh mixed berries
- 1 teaspoon citric acid or lemon zest
- 1/4 teaspoon sea salt
Instructions
- Pour 3 cups filtered water into a medium stainless steel saucepan.
- Bring the water to a gentle boil over medium heat.
- Remove the saucepan from the heat.
- Allow the water to cool to about 160°F.
- Add the gelatin packets gradually to the warm water while stirring continuously for 2 minutes.
- Strain the dissolved gelatin mixture through a fine mesh strainer to remove any undissolved particles.
- Stir ginger powder, turmeric powder, and cardamom powder into the strained gelatin mixture until fully incorporated.
- Add fresh lemon juice and stir until evenly combined.
- Add stevia or monk fruit sweetener gradually, tasting until the desired sweetness is reached.
- Stir in citric acid or lemon zest and sea salt.
- Rinse an 8-inch by 4-inch glass baking dish with cold water.
- Pour half of the gelatin mixture into the baking dish.
- Refrigerate for 90 minutes until semi-set.
- Arrange the fresh mixed berries evenly across the semi-set gelatin layer.
- Pour the remaining gelatin mixture slowly over the berry layer.
- Cover the baking dish loosely with plastic wrap.
- Refrigerate for at least 2 hours until completely firm and set.
- Remove from the refrigerator and let rest at room temperature for 5 minutes before serving.
- Run a thin knife around the edges to loosen the gelatin.
- Dip the bottom of the baking dish into warm water for 30 seconds.
- Invert onto a clean serving platter and tap gently to release.
- Cut into 8 equal portions using a warm wet knife.
- Serve chilled.
Notes
Use filtered water and avoid overheating the gelatin for the best texture. Layer the berries after the first portion is semi-set so they stay evenly distributed instead of sinking to the bottom.
