Ingredients
- 14 ounces silken tofu, one block
- 3 tablespoons white miso paste
- 2 tablespoons rice vinegar
- 1 1/2 tablespoons toasted sesame oil
- 1 tablespoon fresh ginger, minced
- 2 to 3 tablespoons water
Instructions
- Drain the silken tofu block thoroughly by gently pressing it between clean paper towels to remove excess liquid.
- Crumble the drained silken tofu into your blender or food processor.
- Add the white miso paste directly to the blender with the silken tofu.
- Pour the rice vinegar and toasted sesame oil into the blender alongside the miso-tofu mixture.
- Add the minced fresh ginger to the blender.
- Start blending on low speed, gradually increasing to medium-high speed.
- Blend continuously for about 2 minutes, pausing to scrape down the blender sides as needed.
- Continue blending until the dressing reaches a completely homogeneous, silky texture with no visible lumps.
- Add water gradually while blending, starting with 2 tablespoons.
- Increase water as needed until the dressing reaches your desired consistency.
- Taste the dressing and adjust seasonings as desired, adding more miso for saltiness or ginger for heat.
- Transfer the silken tofu miso dressing recipe to a clean jar or storage container.
- Cover tightly and refrigerate until ready to serve.
- Chill for at least 1 hour before serving for the best flavor and texture.
- Shake or whisk before using if the dressing separates slightly during storage.
Notes
Use silken tofu only, not firm tofu, for the smoothest texture. Drain the tofu well before blending, add water gradually, and chill the dressing for at least 1 hour so the flavors meld beautifully.
