Instructions
- Pour the pomegranate juice and coconut water into a small saucepan.
- Heat on medium until tiny bubbles form around the edges, about 5 to 7 minutes, but do not allow the mixture to reach a full boil.
- Remove the saucepan from heat.
- Immediately sprinkle the unflavored gelatin powder evenly over the warm liquid.
- Allow the gelatin to sit undisturbed for 2 to 3 minutes so it can fully bloom and absorb the liquid.
- Stir the mixture gently with a whisk for about 1 minute until all gelatin granules dissolve completely.
- Add the strawberry puree, fresh lime juice, and monk fruit sweetener to the gelatin mixture.
- Whisk thoroughly until all ingredients combine evenly throughout the liquid.
- Place the mixture in the refrigerator for 10 to 15 minutes to cool it to room temperature.
- Divide the slightly cooled gelatin mixture equally among 6 serving cups or a single glass baking dish.
- Cover the cups or dish with plastic wrap.
- Refrigerate for a minimum of 4 hours or until the gelatin achieves a firm but slightly jiggly consistency.
- Top each serving with fresh raspberries or strawberries immediately before serving.
- Add a small dollop of whipped coconut cream if desired.
- Serve chilled.
Notes
Bloom the gelatin properly for a smooth texture, and do not boil the juice because excessive heat can prevent proper setting. Prepare the dessert the night before for the best texture and flavor.
