- 3 tbsp Coconut Oil (essential for smooth melting)
Instructions
- Peel and chop the mangoes into small, uniform cubes, then blend until you achieve a completely smooth, fiber-free puree.
- Mix the puree with sweetened condensed milk in a large stainless steel bowl.
- Whip the heavy cream until stiff peaks form consistently, then fold the chilled mango mixture into the whipped cream using a silicone spatula.
- Pour the mixture into popsicle molds, ensuring you insert sticks straight, and freeze for at least six hours until solid.
- Melt the white chocolate with coconut oil over a double boiler until glossy, then cool slightly to ensure it adheres to the cold bars.
- Dip each frozen bar from this recipe into the chocolate quickly and place back in the freezer to set.
Notes
Ensure the melted chocolate is warm but not hot, as extremely hot chocolate will melt the ice cream instantly upon dipping. Wait for the bars to be completely frozen solid before attempting to remove them from the molds. Store in an airtight container in the freezer for up to 2 weeks.
