  • 1 cup hot water
  • 1 cup heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 12 cups fresh fruit for garnish
  • Pinch of salt

Instructions

  1. Pour the cold water into a small bowl.
  2. Sprinkle the unflavored gelatin over the cold water.
  3. Let the gelatin bloom for 3-5 minutes without stirring.
  4. Heat the hot water until it reaches a full boil.
  5. Pour the hot water over the bloomed gelatin.
  6. Stir constantly for 30 seconds until fully dissolved.
  7. Let the gelatin mixture cool to room temperature.
  8. Combine the fruit juice and granulated sugar in a large bowl.
  9. Stir until the sugar dissolves completely.
  10. Add the cooled gelatin mixture to the juice mixture.
  11. Stir well until evenly combined.
  12. Add a pinch of salt.
  13. Pour the mixture into a 6-cup mold or individual serving glasses.
  14. Refrigerate for 2-3 hours until syrupy but not fully set.
  15. Arrange the fresh fruit pieces on top of the partially set gelatine.
