- 3 medium sweet potatoes, cubed

- 1/2 cup hot honey
- 3 tablespoons olive oil
- 4 cloves garlic, minced

- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/4 cup fresh cilantro or parsley, chopped
- 2 tablespoons fresh lime juice
Instructions
- Preheat the oven to 425°F.
- Wash and cube the sweet potatoes into half-inch pieces.
- Toss sweet potatoes with 1 1/2 tablespoons olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Spread the sweet potatoes on a parchment-lined baking sheet.
- Roast for 20 minutes until caramelized and fork-tender.
- Heat the remaining olive oil in a large skillet over medium-high heat.
- Add diced onion and sauté for 3 minutes until softened.
- Add minced garlic and cook for 1 minute until fragrant.
- Add ground beef and cook for 7-8 minutes, breaking it apart until browned.
- Stir in cumin, paprika, remaining salt, and black pepper.
- Cook for 2 more minutes to bloom the spices.
- Remove from heat and stir in fresh lime juice.
- Divide cottage cheese evenly among serving bowls.
- Top with roasted sweet potatoes and seasoned beef.
- Drizzle hot honey over each bowl.
- Garnish with fresh cilantro or parsley and serve immediately.
Notes
Cut sweet potatoes evenly for consistent roasting. Use full-fat cottage cheese for the creamiest texture. Adjust the hot honey spice level to your taste preference.
