  • 3 medium sweet potatoes, cubed
  • 2 cups full-fat cottage cheese
  • 1/2 cup hot honey
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 tablespoons fresh lime juice

Instructions

  1. Preheat the oven to 425°F.
  2. Wash and cube the sweet potatoes into half-inch pieces.
  3. Toss sweet potatoes with 1 1/2 tablespoons olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  4. Spread the sweet potatoes on a parchment-lined baking sheet.
  5. Roast for 20 minutes until caramelized and fork-tender.
  6. Heat the remaining olive oil in a large skillet over medium-high heat.
  7. Add diced onion and sauté for 3 minutes until softened.
  8. Add minced garlic and cook for 1 minute until fragrant.
  9. Add ground beef and cook for 7-8 minutes, breaking it apart until browned.
  10. Stir in cumin, paprika, remaining salt, and black pepper.
  11. Cook for 2 more minutes to bloom the spices.
  12. Remove from heat and stir in fresh lime juice.
  13. Divide cottage cheese evenly among serving bowls.
  14. Top with roasted sweet potatoes and seasoned beef.
  15. Drizzle hot honey over each bowl.
  16. Garnish with fresh cilantro or parsley and serve immediately.
