Instructions
- Dissolve 2 packets of sugar-free gelatin powder in 2 cups of boiling water by stirring constantly for 2 minutes until completely dissolved.
- Add the sugar-free vanilla pudding mix packet to the hot gelatin liquid.
- Whisk vigorously for 1 minute until completely incorporated.
- Stir in the sugar-free sweetener and vanilla extract.

- Pour 1 1/2 cups of whey protein powder into the cooled gelatin mixture while whisking continuously to prevent clumping.
- Whisk the protein and gelatin together for 2 minutes until the texture becomes smooth and lump-free.
- Slowly add 1 1/2 cups of ice-cold water while whisking.
- Continue whisking for 1 additional minute until the mixture reaches a uniform, smooth texture.
- Remove 1 cup of fat-free whipped cream from the freezer and let it soften for 2 minutes.
- Gently fold the whipped cream into the protein and gelatin mixture using a rubber spatula in an upward scooping motion.
- Fold until the mixture becomes light, airy, and mousse-like without deflating the whipped cream.
- Stop folding when the mixture achieves a consistent, creamy texture throughout without visible white streaks.
- Divide the mixture evenly among 6 serving cups or one 9-inch diameter serving bowl.
- Refrigerate for at least 4 hours or until set to a firm, spoonable consistency.
- Remove from the refrigerator 10 minutes before serving to allow the texture to warm slightly for optimal flavor.
