- 1 medium green cabbage (about 1.5 pounds), sliced
- 2 large yellow onions, sliced
- 6 garlic cloves, minced
- 3 tablespoons vegetable oil
- 2 teaspoons cumin seeds
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lemon juice
Instructions
- Remove outer cabbage leaves and slice the cabbage into thin strips.
- Slice onions into thin half-moons and mince the garlic.
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add cumin seeds and let them sizzle for 30 seconds until fragrant.
- Add sliced onions and cook for 5-7 minutes until golden brown and caramelized.
- Stir in minced garlic and cook for 1 minute.
- Add turmeric powder and red chili powder, stirring well for 30 seconds.
- Add sliced cabbage and toss thoroughly to coat with spices and onions.
- Reduce heat to medium and cook for 15-20 minutes, stirring occasionally until cabbage becomes tender.
- Season with salt and black pepper to taste.
- Stir in lemon juice and fresh cilantro.
- Serve warm as a side dish or light main course.
Notes
Slice cabbage evenly for consistent cooking. Do not overcrowd the pan to allow caramelization. Add lemon juice just before serving for the brightest flavor.
